Quick cooling/freezer cells 20x GN2/1 180/170 kg, Roll-in, without group (delivered dismantled)

Description

  • Cell for loading plates GN 2/1 (or GN 1/1).
  • Load capacity: 20x GN2/1 or 16x 600x400mm.
  • Production per cycle: 200Kg (+70° +3°) and 170Kg (+70° -18°).
  • Chamber size: 780x946xh1850mm.
  • Cell delivered disassembled.
  • Core probe.
  • Compressor unit not included.
  • Trolley & loader 600x400 EURONORM (on request ref: AC/2P2...).
  • NB: delivered without grids and GN plates.
  • Interior and exterior construction in AISI 304 stainless steel, monobloc structure, expanded polyurethane insulation, CFC and HCFC-free, 60mm thick, stainless steel feet.
  • Enclosure: rounded corners and edges without roughness. Deep-drawn bottom collects condensation towards the discharge. Easily removable plate holder structure, slide rails allowing the use of GN 1/1 or pastry dishes 600x400 mm. The unique design of the enclosure, coupled with the oversized AISI 304 stainless steel fan(s) positioned laterally, ensures temperature homogeneity and prevents drying out and frost formation on the food surface.
  • Door: 180° opening, integrated handle, automatic closing with magnetic seal, microswitch to stop the fan when opening. Simple but effective, the door stop keeps the door open, preventing the formation of foul odour and bacterial proliferation. Non-reversible door.
  • Cooling unit: hermetic unit (max. ambient temperature +43°), oversized ventilated evaporator treated against coating salts, automatic defrosting at each cycle or manual, safety pressure switch and thermal overheating relays, refrigerant R452a.
  • TOUCH SCREEN control panel 7" high definition color touch screen, allowing the user to customize all the main functions of the cooling cell.
  • Managing favorites on the home screen. Front accessibility, ease and speed for after-sales service, IPx5 protection rating (against water jets with a hose).
  • Memory (pre-programmable) for 1000 recipes, use in 16 different phases (choice of 16 different successive steps).
  • 7 speed controls.
  • Accessories included: 65mm "anti-tilt" structure. Core probe with 3 sensors.

Optional: Communication module for oven & "TOUCH" cell (see: AC/CMAF-X).

ADVANTAGE:

  • Possibility to insert foods with a temperature up to 90°C.
  • NNC version: 3 customizable cycles (soft +3°C, hard +3°C, hold), BCC version: 5 customizable cycles (soft +3 or -18°C, hard +3 or -18°C, hold), specific cycles for ice cream, yogurt, chocolate, sushi/sashimi, etc....
  • CRUISE function.
  • CCRT function that estimates the remaining time before the end of the cycle.
  • TURBO CCTC function specially designed for continuous production.
  • 3-sensor core probe with CCAC function, which checks its correct insertion into the product.

HACCP:
Equipped with an audible and visual alarm as well as a data archiving system. Possibility to recover the data directly on a computer (serial port). The cooling and freezing cycles comply with NF standards. They can also be customized according to local standards.

U.K. standards (temperature in heart)
of +70°C with +3°C in 90 minutes,
of +70°C with -18°C in 240 minutes.

Optional: Communication module for oven & "TOUCH" cell (see: AC/CMAF-X).
