Low melting temperature

One challenge when melting chocolate is preventing it from burning. Because chocolate already melts at low temperatures, it's advised not to set the temperature too high so the chocolate melts slowly and evenly. The digital display shows the exact temperature of the water and GN trays. Using the arrow keys, you can adjust the temperature up or down. This is especially important with white chocolate, which melts at 36°C, increasing the risk of burning compared to dark chocolate or milk chocolate. 

Chocolate callets 

This chocolate melter is easy to operate. Fill the water basin with water; ensure the water level is between the minimum and maximum mark. Put the 4 GN bins of 1/6 size and 10 cm deep into the chocolate melter. Turn on the chocolate melter and set the desired temperature. An indicator light on the display shows when the chocolate melter has reached the right temperature. Now, fill the GN containers with chocolate. The best way to do this is to use chocolate callets. This is chocolate in a drop shape and special melting chocolate. You can also use a bar, which should be cut into small pieces before you put it in the GN container. However, you then have the chance that some harder pieces of chocolate may remain in it. Stir occasionally and remove the GN container from the chocolate melter when the chocolate has melted sufficiently. 

Prevent lumps in chocolate

Because the four GN containers sit side by side, this chocolate melter has a high risk of water getting into the chocolate. If this water falls into the chocolate, the chocolate will clump. This is why we recommend putting the supplied lids on the GN containers before removing a container from the chocolate melter. The lids have a handy recess for a spoon, so you can stir occasionally without having to take your spoon out of the container again. It is also more convenient to take the front GN containers out of the chocolate melter first and then the back ones. This way, there is less chance of spilling water.

Steam drain and water drain

This chocolate melter is equipped with two convenient drains on the side of the machine. The top drain is the steam drain valve. You can open and close this drain. You must ensure the steam drain valve is open when the machine is on. This allows the hot air from the hot water to be expelled through the drain valve. This has the advantage of preventing steam burns when you want to take out a GN container. The bottom drain is for draining the water from the machine. After melting the chocolate, you can open this drain to clean the machine. Connect a drain hose to the drain or place the chocolate melter next to the sink. The water can then be disposed into the sink and drained via the drain pipe.

Easy cleaning of the chocolate melter

To clean the chocolate melter, ensure the plug is unplugged. Ensure the machine and water are cooled sufficiently. Drain the water from the chocolate melter via the water drain and thoroughly dry the outside and inside of the machine. Clean the GN containers and lids with warm water and a mild detergent. Drying these loose parts well is essential to prevent the GN containers from rusting.
